So I’ve taken time to blog this but seeing as the nights are still a bit cold, it’s the perfect dish for a quick but really great dinner, my cheat chicken vindaloo!
This meat becomes so tender, and the potatoes absorb all the flavor and it’s just amazing! So good I made it twice in one week!! Also I feel like the taste intensifies if you leave it overnight, so if you can, wait a bit!
8 chicken pieces (mix of drums and thighs)
400g baby potatoes sliced in 2
1 large onion sliced
3 garlic cloves sliced
1 teaspoon ground ginger
1 teaspoon paprika
A few cloves
1/2 teaspoon cayenne pepper (I like mine hot so I add more
2 dried bayleafs
So heat your oil, and add your onions and fry until they are lightly brown, then add your garlic and all your spices, cook for a minute and add your chicken. Coat your chicken in these spices and then add your water, and let it cook for 15 minutes with the bay leaves and your potatoes. Add your salt now. After 15 minutes, remove the meat and potatoes and place whatever liquid and stuff in the pot in a blender (your onions and cloves) with the tomatoes and blend until smooth! Then return to the pot, add back your chicken and potatoes and let it cook for 20 minutes until the potatoes are tender..
Again, the flavor is so much better the next day, but if you can’t wait, serve with rice or rotis, and a cool salad..
