Have you ever craved something you’ve never had? That’s my everyday life.. I’ll see something on a site or magazine and I won’t stop thinking about it till I make it for myself. I’m a great lover of tomatoes, in fact you’re about to see an influx of recipes with tomatoes on this site because I went crazy buying them.. all kinds, sundried, canned, cherry and regular! hahaha.. This tomato soup was a real pleasure, comforting and tasty and a hit with my family.. plus it’s quite easy to make so please do try it for a quick dinner or lunch.
You’ll Need : (small starter servings for 4)
8 Medium tomatoes quartered
A teaspoon of cumin seeds
A teaspoon of mustard seeds
2 cups chicken or vegetable stock
A few Bay leaves
Salt and Pepper
Croutons, Bacon, Fresh Cream or Fresh Herbs
How to :
So all you do is place your tomatoes on a roasting pan, sprinkle with your seeds and a little, I mean LITTLE salt and pepper as your stock has salt.
Drizzle with olive oil and place in a hot oven and roast at 140 for an hour and a half..
In the last 20 minutes, prepare your stock, get it to a simmer and add your bay leaves.
Once you’ve removed your tomatoes let them rest for a few minutes, then place them in a blender together with half of your stock, and blitz!
Pour into a pot and mix in the rest of your stock, you’ll see it will thicken by itself!
Top with your choice of toppings and enjoy with fresh bread. SO good! You’ll def make more!
