I’m not a salad girl at all, but I do have my days. I love colour and I texture in a salad, but I don’t compromise on taste EVER!
I love how easy they are, and a great way to eat the required amount of veggies a day. Although I must be honest, I have salads once in a blue moon. When I do though, they don’t disappoint.
This is my version of a good salad! Something you can make for lunch at work, or a light dinner after having a heavy lunch.
Yellow Peppers thinly sliced
Red Onion thinly sliced
Bacon cooked and diced
Mix everything together except the eggs, and drizzle with lemon juice.
Place your eggs on top and sprinkle with black pepper.
